Fish Curry(Doi mach)



Ingredients:
7-8 piece 4 inch salmon fish
250 gram onions(chopped)
8 green chillies(chopped)
1 cup yogurt
1 tbsp ginger paste
1 tbsp garlic paste
5 tbsp oil
Salt to taste
(Serving 4 person)

Method:
Take a pot and marinate the fish pieces with 1 cup yogurt.
Keep it for sometimes.
Then heat a pan with 5 tbsp oil, pour the chopped onions in it.
Saute it till it become brown.
Now add all the spices(1 tbsp ginger paste, 1 tbsp garlic paste, 8 chopped green chillies)
Stirring it and pour the marinate fish in it.
Add salt as per your taste.
Cook in medium heat.
When the fish become soft add 1 cup water and boiled a little time.
Serve it hot with rice or polau.

Mara Pitha(chicken with steam rice-cake)




Ingredients:
1 cup boneless minced chicken.
4 medium size onions(chopped).
Rice flour 1 cup.
chilly powder.
1/2 tsp ginger paste.
1/2 tspgarlic paste.
salt to taste.
4 tbsp oil.
(Serving for 5 person)

Method:
Take a pot and pour 1/2 cup water, add little salt and when it boiled pour flour slowly and stir it.
Make a soft dough.
Add extra water or flour if needed.
Now make 7-8 rice ball.
Cook all the ball in steam.
Your steam rice cake is ready now make it cool.
Then take a pan heat up with 4 tbsp oil, add the chopped onions in it.
Saute it when it become brown, pour the minced chicken in it.
Stirring it and add the spices(ginger paste, garlic paste, chilly powder).
Add salt as per your taste.
Saute it and cut the steam rice cake in quarter size and add in the pan.
Saute it for sometime serve hot.

Mughlai Porota



Ingredients:
For Mughlai wrapper.
2 cup flour.
2 tablespoon oil.
1/2 teaspoon salt.
Water as needed for soft dough.
For Mughlai filling
3 eggs.
1 cup boneless minced chicken/beef/mutton.
1 cup onions(chopped).
4 tablespoon oil.
4 green chilly(chopped).
1/2 teaspoon ginger paste.
1/2 teaspoon garlic paste.
salt to taste.
Other ingredients
 Soyabean oil for shallow fry.
(Serving 4 person)

Method:
Take a bowl combine all the ingredients(2 cup flour,2 tsp oil,1/2 tsp salt) for making mughlai wrapper, add water as needed to make a soft dough.
Cover it and keep it for 30 minutes.
Now heat a pan with 4 tbsp oil pour the chopped onions in it.
Saute it when the onions look brown add all the spices(1/2 tsp ginger paste, 1/2 tsp garlic paste & chopped chillies) in it.
stir it and pour the minced chicken/beef/mutton in it.
If you are a vegetarian then you can use minced potatoes in it.
Add salt as per your taste.
Saute it for sometime Break 2 eggs and pour in the pan.
Stirring it for a little time now pour in a plate and make it cool down.
Divide it in 6 equal portion.
Divide the dough also in 6 equal portion and make a dough  ball.
Take a dough ball and roll out in forth angle size.
Break a egg in a pot and take a little portion and smear all over the wrapper.
Pour the filling in the central of the wrapper and spread it, don't spread in the edge of the wrapper.
Now fold write size then left size then the 2 edge of the wrapper fold it carefully.
Smear little water/egg if needed.
All the mughlai wrapper fold like this.
Heat up a pan with sufficient oil.
And shallow fry all the mughlai porota till it become golden brown.
Cut in piece and serve it hot with salad.

Khurma



Ingredients:
1 cup flour.
2 tablespoon oil.
1/2 teaspoon salt
water to making soft dough.
Soyabean oil for shallow fry.
To make syrup
Jaggery or sugar as per your taste.
Water.

Method:
Combine 1 cup flour, 2 tbsp oil, 1/2 tsp salt and water in a bowl.
Add flour if extra needed and water to make a soft dough.
Now roll out as a thick oval shape.
And cut as a thin stick shape.
Heat a pan with sufficient  oil and shallow fry the khurma stick till it become golden brown.
Now take a pot and add jaggery or sugar as per your taste add water in it.
Heat the pot and stir it to make a thick syrup.
When it become thick pour khurma in it stir it very little time.
Serve cool.

Dimer pitha (Eggs cake)



Ingredients:
3 eggs
1/2 cup flour
2 medium size onions(chopped)
2 green chilly(chopped)
1/2 teaspoon chilly powder
salt to taste
Soyabean oil for fry
(Serving 3 person)

Method:
Take a bowl break 1 egg and pour in it.
Add little onions & green chilly chopped.
adding salt mix it properly.
Heat up a pan with 3 tsp oil and pour the egg in the pan.
Fry it till it become golden brown.
Keep the fry egg in a plate.
Break the 2 eggs and pour in a bowl, add 1/2 cup flour, onions chopped,1/2 tsp chilly powder and salt as per your taste.
Add little water to make a smooth batter
now heat a pan with sufficient oil & cut the fry egg in 4 pieces.
Shallow in the batter and fry in the shallow oil till it become golden brown.
All the egg piece fry like this.
Repeat this till the batter finish.
Serve it hot.

Spicy & sweet Bread



Ingredients:
1 cup flour.
4 tablespoon rice-flour.
1 teaspoon chilly powder.
1 teaspoon salt.
1/2 kg milk.
2 cardamoms.
Sugar to taste.
Oil as needed.
(Serving 4 person).

Method:
Heat up a pan with 4 tbsp oil, pour flour and stir it.
Add 4 tbsp rice-flour, 1 tsp chilly powder, 1 tsp salt, 2 cardamoms.
Stirring constantly.
Add sugar as per your taste.
Add 1/2 kg milk.
Mix all the ingredients properly.
Now take a tray grease it.
Pour the flour mixing in it.
Fix it properly keep it in the refrigerator for 30 minutes.
After 30 minutes cut the flour mixing into pieces.
Heat a pan pour little fry it in middle heat.
Serve hot or cold.
You can bake it in the oven also.

Eggplant Roll



Ingredients:
For eggplant wrapper:
2 big sized eggplant
4 tablespoon flour
2 cup water
1 tablespoon salt
Oil for fry

For eggplant stuffing:
1 cup Salmon(boiled)
1 cup boiled rice
1/2 cup onions(chopped)
1 tablespoon chilly powder
1/4 table spoon ginger paste
1/4 tablespoon garlic paste
Salt to taste
(Serving 5 person)

Method:
Cut the eggplant into slices.
Take a pot pour 2 cup water add 1 tsp salt & pour the slices eggplant in it.
Soak it 30 minutes.
Now drained the slices.
Smear flour and fry it in a pan.

Take a pot and boiled the fish with 1 cup water, adding 1/4 tsp chilly powder, 1/2 tsp salt.
When it boiled make it boneless.
You can use other fish also.
Heat up another pan with 4 tsp oil, pour the onions in it.
Stir it when the onions become brown, pour the fish in it.
Stirring it, add 1/4 tsp ginger paste, 1/4 tsp garlic paste,1/2 tsp chilly powder.
Stir it constantly,
Add the boiled rice & add salt to taste.
Stir it for a little time.
Now take a piece fry eggplant put some stuffing in it and fold it serve it hot.

Alur luchi with Kheer



Ingredients:
For Alur Luchi.
250 gram Potatoes.
1/2 kg flour.
1/2 tablespoon salt.
Oil if need for making dough.
Soyabean oil for fry.

For Kheer:
100 gram rice.
1/2 kg milk.
2 cardamoms.
2 little piece cinnamon.
Sugar to taste.
(serving 4 person)

Method:
How to make alur luchi:
Boiled the potatoes then peel it & mashed it.
Mix it with flour add 1/2 tsp salt and make soft dough.
If you need oil then use it .
Now take a small portion and roll out make a spherical shape.
All the luchi roll out like this.
Heat a pan with sufficient oil.
Fry the luchis till it become golden brown.

How to make Kheer:
Take a pot and boiled the rice with water,add 2 cardamoms & 2 little piece cinnamon.
Take another pot heat up with 1/2 kg milk.
Pour the boiled rice in it and blending it.
Add sugar to taste.
Boiled 2-3 times and serve cold with hot alur luchi.

Rice Cake with Molasses




Ingredients:
1/2 kg rice-flour.
11/2 cup water.
1/2 tablespoon salt .
Molasses for serve.
(Serving for 4 person)
Method:
Take a pot and boil 11/2 cup water,add 1/2 tsp salt,
 when water boiled pour 1/2 cup rice flour slowly slowly and stir it constantly.
Make a soft dough if extra flour needed then add more flour.
Now make it little cold down and use your hand to knead the flour.
Take a small portion and make a shape as you like.
I usually make oval shape.
All the cake shape like that.
Now cook the cake in evaporate.
Serve it hot with molasses.

Noodles



Ingredients:
100 gram noodles
1/2 cup potatoes
1/2 cup onions
3-4 green chilly
1/3 cup green pea
salt to taste
4 tablespoon oil
1 egg
(Serving 3 person)
Method:
Take a pan heat up with 4 tsp oil.
Minced the onions,potatoes and green chilly.
Add them into the pan and stir it.
Add the green pea.
Break the egg and pour in the pan.
Saute it for a little time.
when it cooked properly,boiled the noodles with water in a pot and drained the water when it boiled.
Add 1 tsp oil in the noodles so that your noodles couldn't stick.
Now pour the noodles in the pan and stirring constantly.
Add salt as per your taste.
Stir it for sometime.
Served it hot.

Chicken Soup with Wonton



Ingredients:
1 medium size chicken
1 egg
1 tablespoon cornflower
1/2 cup carrot (chopped)
2 onions(chopped)
1 tablespoon ginger chopped
2 little piece cinnamon
4-5 green chillies (chopped)
1 tablespoon oil
salt to taste

How to make:
Cut the chicken & mashed it.
Take a pressure cooker  and pour all the ingredients, add water and boiled.
Wait till it take 2 whistle.
Then blend all the ingredients, then pour in a pot adding 1 liter water and boiled it.
When it boiled mix egg and stir it.
cook in medium heat.
Add 1 tsp cornflower and boiled it.
Then served it.

Ingredients:
For wonton wrapper:
2 cup flour
1 egg
1/2 tsp salt
Water as needed
For wonton filling:
1/2 cup potatoes minced
1/2 cup boneless chicken minced
2 onions chopped
1/4 tsp chilly powder
1/4 tsp ginger paste
2 tsp oil
salt to taste

Method:
Take a pot and pour 2 tsp oil and mix all the wonton's filling ingredients and fry it properly.
Take a bowl mix all the ingredients and make a soft dough.
Cover it and keep for 30 minutes.
Now roll out like this make the wrapper very thin.

Smear water one surface and pour filling in central

Now fold like this and press the wonton wrapper edge with finger so that it could stick properly.

Press slowly  smear water and make a shape like this.
Fry it in a pan till it become golden brown.
Serve hot with hot chicken soup or sauce

Alur Paratha with tomato sauce



Ingredients:
For Alu Paratha
1/2 kg potatoes
1/2 kg flour
1/2 tablespoon salt
2 tablespoon oil
Soyabean oil for fry

For Tomato sauce
1 kg tomato(chopped)
2 onions (chopped)
3 piece garlic
5 green chilly(chopped)
1/2 tablespoon salt
2 little piece cinnamon
1 tablespoon flour
sugar to taste
(It could serve 3-4 person)

Method:
How to make paratha: Take a pot & boiled the potatoes.
peel the potatoes & mashed properly.
Take a bowl pour the mashed potatoes.
 Add flour, 2 tsp oil, 1/2 tsp salt mix properly add make dough.
Now take a small portion and roll out and make oval shape.
Fry it in a wok or tawa with oil.

How to make sauce: Take a pot pour all the ingredients without flour & sugar.
Add 1 cup water, when tomato boiled.
Blend it and make a paste.
Now boiled the paste adding 1 cup water.
Add sugar as per your taste.
 Serve it cool with hot Alu paratha

Vermicelli Cake(Semai Pitha) step by step

Step 1: take 100 gram vermicelli, 2 eggs & flour.



Step 2: Heat up a pot with 1/2 liter milk when milk boiled add 3 cinnamon, a little piece cardamom & 250 gram sugar stir it for a little time & cover it. Cook it in medium heat.  (Add sugar as per your taste).

Step 3: Heat a pot with 1 cup water when it boiled pour vermicelli in it, stir it for a little time.


Step 4: Take a bowl pour the vermicelli make it cool down.
Add 2 eggs, 2 tsp flour & add sugar as per your taste. Mix properly.


Step 5: Heat up a pan with sufficient oil.
Take a small portion of vermicelli mixing use your hand to make a spherical shape
All the mixing make shape like this and fry in oil till it become light brown.



Step 6: when the cake fry properly drained oil and pour in the milk.




Step 7: Soak it for 10 minutes serve it hot or cold as you like.


( This food is enough for 7-8 person)

Pulse Cutlet(Daler Bora)




Ingredients:
250 gram pulses paste
250 gram onions(chopped)
8 Green chilles paste
3 tablespoon rice-flour
Salt to taste
Oil for fry

Method:
Soak the pulses in water about 5-6 hours & grind it.
Chopped the onions.
Grind the green chilles.
Take a bowl and mix the all ingredients without oil.
 Heat a pan with sufficient oil.
Now take a small portion  mix pulses  use your finger and make a spherical shape.
Fry it in the oil till it become light brown.
All the mixing pulses fry like this.
Serve it hot with tea.
(it could serve for 5 person)

Chicken Curry



Ingredients:
2 medium size chickens(cut in piece)
250 gram onions(chopped)
200 liter oil
1 tablespoon turmeric powder
1 tablespoon chilly powder
1 tablespoon garlic paste
1 tablespoon ginger paste
3 cardamoms
2 piece little cinnamon
Salt to taste
Water for boiled


Method:
Cut the chicken in piece and wash it.
Chopped the onions.
Heat a pan with 200 liter oil, add the chopped onions.
Stir it, add 1 tsp salt.
Saute it, when onions become brown, pour 2 chickens.
Stirring it constantly.
Add 1 tsp turmeric powder, 1 tsp turmeric powder, 1 tsp ginger paste, 1 tsp garlic paste.
Mix with the chicken properly.
Add 3 cardamoms & 2 little piece cinnamon.
Fry it for sometime, when the chickens color changed.
Add 2 cup water & cover it.
Check salt as per your taste.
Stir it when the water dry up, add more 1 cup water & boiled little.
Now your chickens cooked.
Serve it hot with rice & ruti.
(this chicken could serve for 8 person)

Dal Puri



Ingredients:
For making dough
500 gram flour
2 tablespoon oil
1/2 tablespoon salt & water
For Stuffing
250 gram Lentils
3 medium size onions(chopped)
4 green chilly(chopped)
3 tablespoon oil
1/2 tablespoon turmeric powder
salt to taste
Oil for deep-fry.

How to make puri:
Take a pot pour the flour, add 2 tsp oil, 1/2 tsp salt and water.
Mix properly and make soft dough.
Divide the dough into equal portion.
Now take a pan heat up with 3 tsp oil.
Add the chopped onions and green chilly.
Stirring it.
Clean the lentils when the onions become brown pour the lentils in it.
Stir it, mix 1/2 tsp turmeric powder and salt as per your taste.
pour 1 cup water and cover it.
when the water dry up pour it in a bowl for cool down.
Roll out each portion of  the dough into a small diskette.
Now take some lentils and keep it in the diskette center.
Cover the stuffing with the dough by slowly stretching.
Seal it tightly.
All the portion stuffing like this.
Roll out each portion slowly & carefully
Heat up a pan with sufficient oil.
Deep-fry the puris in it.
Serve it hot.
(it's enough for 5 person)

Beaten Rice Biryani




Ingredients:
250 gram Beaten Rice
3 medium size onions(chopped)
3-4 green chilly(chopped)
4 tablespoon oil
1/2 tablespoon turmeric powder
1/2 tablespoon salt
Sugar to taste

Method:
Soak the beaten rice for 5 minute and wash it.
Heat up a pan with 4 tsp oil.
Add the chopped onions and green chilly.
Saute it for a little time, when the onions look brown, add the beaten rice in it.
stirring it constantly.
Add 1/2 tsp turmeric powder, 1/2 tsp salt mix with beaten rice properly.
Add sugar as per your taste.
Cook it for sometime.
Serve it hot as a snack.

Lentil Soup





Main Ingredients:
250 gram Lentils
2 medium size carrots
1/2 cup chicken without bone
2 medium size onions
1/2 tablespoon turmeric powder
1/2 tablespoon chilly powder
1/2 tablespoon ginger paste
1/2 tablespoon garlic paste
2 tablespoon oil
Salt for taste

How to cook:
Cut the carrots, onions and chicken then wash it.
Clean the lentil also.
Then take a pot pour  2 cup water then add  the lentil, carrots, onions, chicken, 1/2 tsp turmeric powder, 1/2  tsp chilly powder.
Add 1 tsp salt.
Cook it, when all the ingredients boiled.
Blend it and take another pot heat up with 2 tsp oil.
Add 1/2 tsp garlic and ginger paste in it and fry little.
Pour the lentil mix in it and add 2 cup water.
Add salt as per your taste.
Cook it 10 minutes.
Serve it hot with lemon.
* This soup is enough for 5 person*

Egg Pudding




Main ingredients:
4 eggs
1 liter milk
3 cardamom
4 tablespoon sugar
raisins or nuts for garnish

How to cook:
Take a pot boiled 1 liter milk again & again so that it become thick.
Then pour it in a bowl.
When it become cool, add 4 eggs, 3 cardamom & 4 tablespoon  sugar in the bowl.
Mix it properly.
Then bake it in oven.
If you don't have oven then take a big saucepan pour some water.
Take another bowl make it grease.
Pour the eggs mixing in it.
Set it in the saucepan, cover it with a lid and  keep a heavy things over the lid.
So that your bowl couldn't move.
Cook it in medium heat 15-20 minutes.
Check that your pudding properly cooked.
Cut it piece with a knife and garnish it with raisins or nuts.
Serve it hot or cold as you like.

Rice-milk(Payes)





Ingredients:
250 gram rice
1 liter milk
3 cardamom
2 little piece cinnamon
1 cup coconut grate
sugar to taste
nuts for garnish

How to make:
Take a pot  boiled 1 liter milk and cook it in medium heat.
Take another pot cook 250 gram rice with water, 3 cardamom. 2  little piece cinnamon.
Stir it from time to time.
When the water dry up, use big spoon to grind rice, add little water also.
Grind it properly.
Then mix the milk in the rice and stir it.
Add grate coconut also.
when the milk boiled add sugar and stir it.
Mix sugar as per your taste.
Cook it a little time in medium heat.
after sometime your cooking will be finished.
Serve it cold.
Garnish it with nuts.
*This amount of Rice-milk is enough for 10 person*

Quickly Egg Curry




Ingredients:
4 eggs
3 onions(chopped)
4 tablespoon oil
1 tablespoon ginger paste
1 tablespoon garlic paste
1 tablespoon turmeric powder
1 tablespoon chilli powder
salt for taste

How to cook:
First take a pot and heat up with 4 tablespoon oil then chopped the onions and add in the pot.
stir it for a little time.
Add a little water
Then add 1 tablespoon  ginger and garlic paste, 1 tablespoon turmeric powder, 1 table spoon chilli powder and add salt.
stir it for 1 minute.
Add 1 cup water when the water boiled, break the eggs and pour in the pot slowly & carefully.
don't add the eggs in the pot in one side add it from different side.
cover the pot and cook in medium  heat and stir it from time time.
Check salt also.
After sometime your cooking will be finished.
Serve it hot with rice.

A dish of potato & cauliflower


Ingredients:
500 gram potatoes
1 kg cauliflower
4 medium tomatoes
1/2 tablespoon garam masala
1 table spoon turmeric powder
2 medium onions
7-8 green chilli
1/2 table spoon garlic paste
1/2 table spoon ginger paste
6 table spoon mustard oil
salt for taste

How to make:
Take off the peel of potatoes and cut them into quarter size, cut the cauliflower in quarter sized also and wash them.
wash the tomatoes and chop into quarter  size.
Heat up two table spoon oil in a pot and fry the potatoes & cauliflower till it become brown.
Then chop the onions and take another pot heat up with 4 table spoon oils and pour the onions in the pot and fry it till it grown brown.
Then pour a little water in the onions and mix the garam masala  powder,garlic paste,ginger paste,7-8 green chilli then stir it for 1 minute.
If you don't want to use garam masala powder,ginger,garlic paste then don't use them.
Then mix tomato.potato and cauliflower stir it and mix one cup water.
Mix salt for taste then cover and stir in medium heat.
Stir time to time.
When it become dry your cooking will be finished.
